This is another rave about Clean Eating magazine. I love their two week plans because if something is involved in a recipe {like watermelon} it will show up in the meal plan many other times in many different ways so that you can be sure to use that melon until it's gone! I love watermelon so much, but in the old days I wouldn't have been able to deal with a huge watermelon. It would stress me out that there is SO MUCH OF IT! I am also ashamed to say that we would probably have let a portion of it go to waste either because it would go bad or we would get tired of eating it plain over and over.

Melon Salad (2 servings)
4 cups chopped watermelon
1 cup diced cucumber
1/2 cup feta
1/4 cup mint
2 tbsp. balsamic
Watermelon Mint Smoothie
BLEND
2 cups chopped watermelon
1 cup coconut milk
1/4 cup spinach
2 tbsp. mint
ice
1 cup watermelon
(repeat often as a side for breakfast, lunch, or dinner)
1 cup watermelon + 1/4 cup feta
1 cup cubed watermelon + 1/4 cup chopped walnuts

Perfect, we just bought our first watermelon of the summer today. :) I have to admit, we usually get it all eaten plain before we have to throw it away.
