This dinner is VERY yummy. I love English muffins. I think my love for English muffins started when I would order an Egg McMuffin from McDonald's for breakfast (I know, a sin). This is a multi-grain English muffin. The tuna salad is just tuna, Greek yogurt, and Dijon mustard. There was extra, so I left it in a side bowl. The soup is my go-to Amy's Organic Lentil Vegetable Soup.
